Peanut Butter Cookie Dough No-Bake Protein Balls

I'm stoked to be sharing another one of my favorite simple and scrumptious no bake snacks! Now that I work full time, protein bites have become a necessity to have on hand. These ones taste like peanut butter cookie dough except they are healthy, paleo and safe to eat. Plus they can easily be made vegan by using maple syrup or date syrup instead of honey!
The texture of these turned out great in my opinion! I used Simply Tera's vanilla protein powder, Vital proteins hot coco collagen powder and Aldi brand honey & natural peanut butter. I used big Aldi brand dark chocolate chips but you could easily use mini chocolate chips instead!
Peanut Butter Cookie Dough No-Bake Protein Bites

Prep Time: 10 mins
Chill Time: 1 hour
Total Time: 1 hour & 10 mins
Servings: 14 bites
Ingredients:
1 cup vanilla protein powder
1/2 cup collagen powder*
1 cup peanut butter
1/4 cup honey
1.5 tbsp melted coconut oil
1 tsp vanilla extract
1 tsp pink sea salt
1/3 cup dark chocolate chips
*if you don't have collagen powder you can replace with more protein powder


Instructions:
In a mixing bowl combine all of the ingredients (except the chocolate chips) and mix until you form a mold-able batter. Fold in the chocolate chips.
Roll into bite sized balls and place on a lined baking sheet. (I used my hands but you can use an icecream scoop for more uniform balls)
Eat right away or let chill in the fridge for at least an hour if you want them to be slightly firmer. These last about a week in the fridge!


Enjoy as a quick snack or a sweet after dinner treat!
