No Bake Peanut Butter Chocolate Protein Bites

I'm happy to be back with a new no bake protein bites recipe! I was craving a peanut buttery snack the other day and that craving resulted in these tasty protein bites. Not only are these bites tasty, they are healthy and made using minimal ingredients. I made sure to add lots of chocolate protein powder to the recipe so that I could eat them as a little post workout treat!
The secret ingredient that made the texture of these bites so great was oat flour! I blended my oats for a few minutes on high speed and ended up with the perfect flour consistency. I used Quaker old fashioned oats, Simply Tera's chocolate protein powder and Aldi brand organic honey & natural peanut butter. I put one big Aldi brand dark chocolate chip in each bite but you could easily add several chocolate chips to the batter! Mini chocolate chips would work great as well!
It doesn't take long at all to make these bites and I highly recommend blasting Taylor Swift's new album, Evermore, while you make them. It doesn't get much better than T Swift and delicious treats!
No-Bake Chocolate Peanut Butter Protein Bites

Prep Time: 10 mins
Chill Time: 30 mins
Total Time: 40 mins
Servings: 14 bites
Ingredients:
3/4 cup oat flour
3/4 cup chocolate protein powder
3/4 cup peanut butter (melted)
1/4 cup honey
1 tsp vanilla extract
Dark chocolate chips


Instructions:
Blend or process 3/4 cup of old fashioned oats until you achieve a flour consistency.
Melt 3/4 cup peanut butter in a microwave safe dish for about 20 seconds.
In a mixing bowl combine all of the ingredients (except the chocolate chips) and mix until you form a mold-able batter. Fold in the chocolate chips.
Roll into bite sized balls and place on a lined baking sheet. (I used my hands but you can use an icecream scoop for more uniform balls)
Eat right away or let chill in the fridge for at least 30 minutes if you want them to be slightly firmer. These last about a week in the fridge!
