Coffee & Banana No-Bake Energy Bites

Energy Bites have become my new favorite simple, healthy and tasty treat! They require minimal effort and ingredients, and I love that there are so many different ways to make them. Whenever I want a quick snack or am craving something sweet after dinner, energy bites are my go-to.
I am 100% a coffee addict, so I decided to try tossing some coffee grounds into this batch of bites. Such a good decision! The bitterness of the coffee mixed with the sweetness of banana, nut butter and honey created the perfect flavor. The addition of chocolate chips took the flavor to the next level!

All you need to make these bites are 7 simple ingredients! Before you know it you will have about 24 delicious little caffeinated bites of happiness ready to snack on throughout the week. Make a batch just for yourself or share with your family and friends. Up to you!
Coffee & Banana No-Bake Energy Bites

Prep Time: 10 mins
Chill Time: 25 mins
Total Time: 35 mins
Servings: 24 bites
Ingredients:
1 banana
2.5 cups oats
1/2 cup peanut butter
2 tbsp honey
3.5 tbsp coffee grounds
1 tsp cinnamon
1/2 cup dark chocolate chips


Directions:
In a large mixing bowl, mash banana until there are no longer lumps.
Add the remaining ingredients to the bowl and mix until well combined. Refrigerate the mixture for about 5 - 7 minutes.
Roll into 24 uniform balls and place on a lined baking sheet to chill and set in the refrigerator for at least 20 minutes.
Transfer them to a bowl or tupperware and enjoy! These bites last about 1 week in the refrigerator.
