If you love easy, healthy and affordable meals, than this vegetarian egg bake is the perfect recipe for you! It is a nutritious breakfast and can also be reheated and used to meal prep for the week. It lasts about 5 days in the fridge or can be kept in the freezer for several months.

With this egg bake you get protein from the eggs and cheese & vitamins and fiber from the spinach, onions and beans.

I chose to have a couple pieces for breakfast with some avocado chunks for extra healthy fat and fiber and Chalula hot sauce for a little extra flavor and spice. It was DELICIOUS and kept me full until lunch.
5 Ingredient Veggie Egg Bake

Prep Time: 10 mins
Cook Time: 35 mins
Total Time: 45 mins
Servings: 12
Ingredients:
12 eggs (I used 10 because that's all I had at the time, but it's better with 12)
15 ounce can of black beans (drained and rinsed)
1 or 2 handfuls of spinach
1/2 white onion, chopped
1/2 cup of shredded cheese (I used pepperjack)
Optional: salt, pepper and onion powder
Directions:
Preheat oven to 350 degrees and spray a 9 x 13 baking dish with cooking spray
In a bowl, whisk eggs with 2 tablespoons of water, salt, pepper and onion powder
Heat a large pan over medium heat with cooking spray and saute spinach until wilted
Add black beans and onions to the pan and stir until warmed through, remove from heat and add the mixture into the bottom of your baking dish
Pour the eggs over the bean and spinach mixture and stir
Sprinkle the shredded cheese evenly on top and bake for about 35 minutes
Serve fresh or let cool before slicing and refrigerating to eat later
