5 Ingredient Banana Breakfast Bars

I recently moved into a new apartment and was pretty short on groceries when I whipped up these bad boys. I typically have Lara, Kind or some type of protein bars on hand at all times, so I was bummed on Friday when I realized I had run out. I've seen other people on Instagram make their own bars, so I decided to just go for it!


I had 3 ripe bananas and with a little inspiration from Pinterest and the few items I had on hand, I did some experimenting and ended up with these super easy and nutritious breakfast/granola bars that are made from clean and real ingredients.


These bars are great for breakfast, snack time or even as a healthier dessert alternative and the texture is similar to that of banana bread.


Prep Time: 10 mins

Cook Time: 25 mins

Total Time: 35 mins

Servings: 8


Ingredients:

  • 3 ripe bananas

  • 2 cups of rolled oats

  • 2 cups of flax seeds

  • 1 tsp of cinnamon

  • 1/2 cup of honey

  • Optional (2 cups of collagen or protein powder)

  • Optional (nut butter drizzled on top)



Directions:

  1. Preheat oven to 350 degrees and spray a 9 x 9 pan with cooking spray

  2. In a large mixing bowl mash your 3 ripe bananas then fold in your oats, flax seeds, cinnamon, honey and optional collagen/protein powder

  3. Add the mixture to the pan and spread nut butter on top if desired

  4. Bake for 22-25 mins

  5. Let cool for about 15 mins before cutting into eight bars (about 3.5 in each)

  6. Store in an airtight container in the fridge for up to 1 week



These bars would also taste great with blueberries, chia seeds, chocolate chips, dried cranberries, etc. You can customize them to your liking! I ate one this morning with a dollop of peanut butter on top and it was delicious!
