5 Healthy & Cheap Vegetarian Microwave Meals Under $2.50

I love to cook but with my full time job starting soon, I know that sometimes I will need to rely on microwave meals for quick and easy lunches. I'm sure many of you can relate! The downside to microwave meals is that a lot of the time they tend to be unhealthy. I decided to put together this list of some of my favorite microwavable options that are vegetarian friendly, more affordable and healthier than many other options. These are all from Walmart and each photo is linked to the website where you can purchase the product. You can also find these products at Target, Hy-Vee and other major grocery stores!
1.Green Giant Garden Vegetable Medley ($1.98)
Although is says there are two servings in the bag, I typically eat the whole bag since I am eating it as a meal and not a side dish. Depending on what type of microwave you have it takes 6-8 minutes and is so tasty! I love the mix of potatoes & veggies. It already comes lightly sauced, but I add mild salsa for even more flavor! 2. Good Food Made Simple Cheese and Veggie Burrito ($1.98)
I had to include a picture of the inside of the burrito because it is loaded with delicious eggs, cheese, potatoes, peppers and onions! This is a quick and yummy option for breakfast or lunch and it pairs perfectly with some hot sauce. It’s ready in under 2 minutes and has 14 grams of protein...music to a vegetarian's ears! If you have more time you can pop this bad boy in the oven for a crispier burrito.
3. Nature's Earthly Choice Burrito Bowl ($2.28)
This bowl is full of plant based protein and is ready in only 60 seconds! It is surprisingly flavorful for a microwave meal and I didn't even have to add anything extra to it when I made it. Next time I buy it though, I want to try some avocado chunks on top!
4. Lean Cuisine Butternut Frozen Squash Ravioli ($2.48)
This butternut squash ravioli really surprised me! The sauce is creamy and flavorful and you get a good portion of veggies. There aren't a ton of healthy pasta microwave meals, so I was stoked to find this! I also love that it has 10 grams of protein and is under 300 calories!
5. Amy's Chunky Vegetable Soup (several flavors) $2.37
My roommate recently introduced me to Amy's soups and I have a feeling they will become a work lunch staple. This soup is ready in only 3 minutes and I was surprised by how flavorful it was! It is also packed with veggies making it a great healthy and hearty lunch option. Aside from chunky vegetable, I really like the black bean vegetable and split pea flavors!
